INGRIDENTS
1 Yellow Onion | ¾ Cup Raw Cashews |
3-4 Dates | 3 Cloves Garlic |
1 Cup Vegetable broth | 2 Tsp Smoked Paprika |
Salt and pepper to taste |
INSTRUCTIONS
1. Start by bringing a small pot of water to a boil, add your cashews and let them soak while preparing the rest of your ingredients.2. Chop the onion into small pieces and add it to a large saucepan with olive/ avocado oil.
3. Remove the pits from the dates if they’re not pitted. Chop in half and add to the saucepan once the onions begin to soften.
4. Add 3 cloves of garlic, fresh or minced. Mix in the paprika, salt and pepper.
5. Let everything cook for about 10 minutes or until cashews become soft. Add the onion mixture and cashews to a blender, blend on high until smooth.
6. Serve over fettuccine or your favorite pasta.
